Do I need two wills if I own property in two countries?
Often, yes. Many people keep a UK will for UK assets and a local will for land or houses abroad. Each should say it only covers its own country, so one doesn't cancel the other.
Can a UK will cover my land in Nigeria or Ghana?
Land is usually governed by the law of the country where it sits. A will made under local rules is often easier for your family to use there. Ask a local lawyer.
Can I have different executors in each country?
Yes. Naming someone on each side often makes things faster, because they can deal with local registries and banks.
